“I never cook anymore, now that it’s just me.”

So report women, especially, once their families are grown and / or their husbands gone. It's the same for singles and empty-nest couples. Often, it’s just easier to rely on frozen meals or carryout or doggie bags. That means no cooking, no waste and no clean-up – but to my mind, little pleasure, either.

I'd like to especially highlight my recipe for Chicken Sybil, what I think of as a "miracle recipe" for singles. It's so quick, so easy, so good!!! With just one technique, Chicken Sybil transforms into "multiple personalities" with inexpensive on-hand ingredients.

  1. I usually cook for just two and really enjoy it when it's just for me. Why? I can make exactly what I want and not have to worry about the likes/dislikes of others.

    While getting amounts right can be a little tricky sometimes, I don't like cooking standard sized batches of foods and either freezing or eating them until they're gone. The exception is soup, but I make smaller batches of soups, too.

    I'm glad to see you address this. I enjoy good food and it's better made at home than anywhere else. Even, or maybe especially, when cooking for just one (or two).

  2. This is such a great resource! I always end up with so much food leftover and I hate to waste it but I get sick of the same meals again and again.

    I think even families sometimes need this with eveyone's busy schedules - a lot of times not everyone is even eating the same meals.

  3. Sally ~ Yes, there's upside to cooking for two. I'm in the other court, however, about eating up leftovers and freezing so "cooking just enough" remains a particular challenge, one I'm working on!

  4. Thank you, thank you, thank you. My (new) husband and I have been going round and round on the issue of food. I grew up helping my mom cook hearty meals to feed the 4 of us (but most meals were for like, 6, because my dad and brother eat like horses.) and so all of my meals are for way too many people. He doesn't mind until it comes to leftovers. I hate them! And so, we battle over how much to cook of everything. It is so nice to have a resource of meals for 2!
