My top three tips for staying cool during the heat wave of summer. This simple salad of smoked salmon salad not only 'looks' cool, you'll barely break a sweat assembling the handful of ingredients onto plates. Stay cool, stay cool!
How do you stay cool during a hot-hot summer?
My grandmother put a block of ice in front of a fan to help her four children sleep better on hot nights. My sister recommends wearing wet socks to bed, even a damp t-shirt.
Me, I’m all for keeping the oven on “off” and the supper on “fast” and “light”.

THE OLIVE BAR IS OUR FRIEND The grocery store’s olive bar is a welcome convenience when you need just a bite or two of an ingredient. For this salad, pick up a few olives and a couple of roasted red peppers. (If you like, here’s How to Roast Peppers in the Oven, including tips on the best oil for roasting peppers.) Even though homemade Olivada is ever so easy, when I just need a smidge, I'm happy as an olive to pick up a small scoop from the olive bar.

THE FLAVOR BIBLE With the garden already spitting out cucumbers like a double-barreled shotgun, this salad was inspired by The Flavor Bible (thank you, Elise!), a great reference book, no recipes per se, simply a suggestion of flavors that complement individual ingredients. For intuitive cooks, just an idea or two, that’s all it takes and supper’s on the table. I live in awe.

QUICK SUPPER:
SMOKED SALMON SALAD with
QUICK-PICKLED CUCUMBERS & ROASTED PEPPERS
Time to table: 15 minutes
Serves 4

CUCUMBERS
- 1/4 cup white wine vinegar
- 1/2 cup water
- 1 teaspoon sugar
- 1 tablespoon cream
- Fresh herbs, chopped – dill and basil work beautifully
- 1 – 2 cucumbers (about 1 pound), peeled and sliced in thin rounds
- 2 roasted red peppers, cut into wide swaths
- 12 ounces smoked salmon
- More fresh herbs for garnish
- Olives
CUCUMBERS In a large bowl, stir together the cucumber ingredients.
ASSEMBLE Arrange a bed of cucumber on each plate. Top with roasted pepper, smoked salmon. Sprinkle fresh herbs and olives on top. Serve with strips of Fried Bread schmeared with cream cheese on the side.


This salad is already a riff on lox and bagels but to move it even closer, sprinkle the salmon with capers and finely chopped red onion, then use bagel slices to make the Fried Bread.
Usually, I love texture contrast in salads but in this case, the smoked salmon and roasted red peppers have a much similar mouthfeel and work beautifully together.
