Calling all beet lovers! I'm thrilled to share this long-time recipe for easy pickled beets. Great news, these pickled beets don't need canning but keep for weeks and weeks in the refrigerator . I start with canned beets from the grocery store but you can also use fresh beets, just roast them first. These beets are super-simple to make whether a small batch or a large batch.
