Chicken Salad for Sandwiches

Nothin' like a good chicken salad sandwich from a deli or sandwich shop. So why then don't we make chicken salad sandwihes at home more often? I've been working on this recipe for a couple of years and finally nailed it. The first trick is texture, a two-step process with a food processor. After that, it's stir in some simple pantry ingredients to create a moist, super-flavorful chicken salad that holds together in sandwiches. It's handy to have on hand for quick lunches and sandwiches, especially over a busy week or weekend and when expecting a houseful.

Sweet Pepper Pasta Skillet

A simple vegetable pasta in a light cream sauce, almost three pounds of barely cooked vegetables (three!!! colors of bell pepper plus corn and peas) topped with juicy tomato and for anyone in the mood, something creamy. A month ago, if you'd told me I'd be raving about a dinner made from three giant bell peppers from Sam's Club or Costco, I'd have been intrigued ... but dubious. Now here I am, raving about a skillet full of pasta and colorful veggies that's way more than the sum of its parts. And oh yeah, I've been experimenting with a new way to cook pasta and it works so well, it's my new method for cooking dried pasta.

Summer's Tomato Soup

Seasonal clothing is commonplace, think summer sandals vs winter boots. But a homemade tomato soup especially for summer? Yes! Summer's Tomato Soup is simple, just a few pantry ingredients plus fresh tomatoes. It's made with summer's ripest and reddest tomatoes so the soup's color is extra beautiful. And the taste? Complex. Unexpected. Summery.
Seasonal cooks, you know you'll love this herb-tinged tomato soup. If you're curious? Yes, there's a cold-weather homemade tomato soup too, it's Winter Tomato Soup!

Thick Iowa Chops with Easy Stuffing Crust

This is one of my very oldest recipes, the way I've been baking my family's favorite "Iowa chops" in the oven for ever so long. The chops are topped with a stuffing-like crust made with bread crumbs, mustard and fresh herbs. These chops are kinda like stuffed pork chops except the stuffing's on top. Much easier!

Seasonal Sundays (Week 31) The Best of Summer

Let's grab onto summer, shall we? This week's collection includes all the summer highlights, the dishes we make only in summer and maybe even just once. But somehow, such special summer recipes, well, they make summer summer.

Zucchini Bread with Carrot & Candied Ginger

Call me picky but for a long time now, I've been hunting for the one go-to zucchini bread recipe to call my own. This recipe has it all: a generous measure of grated zucchini, bright color from grated carrot, spice-forward from pantry spices. Most of all, this zucchini bread stays moist and fresh for a long time. Some times? It pays to be picky.
