One of spring's great classics is a steaming bowl of asparagus soup. This is the recipe I've followed for many years, in part because it's so simple, in part because I change the recipe, just slightly, to move from an everyday and almost rustic asparagus soup to a richer, smoother, more refined and elegant soup made to impress. Easy Skillet Stroganoff

The famous Russian steak draped in sour cream sauce, here turned into a weeknight skillet casserole with ground beef plus the usual mushrooms and sour cream plus a simple secret ingredient that makes all the difference. (Think pickles!) Good news, the recipe easily converts to chicken, Greek yogurt and brown rice, a "stroganoff-ish" combination that's just as good and Weight Watchers friendly!

Finnish Tiger Cake

Mini Tiikerikakku (Marble Pound Cake)
Oh friends, it's been decades since I've made this old Finnish recipe, a pound cake with iconic chocolate stripes, just like tiger stripes. But isn't it just fun? (And oh, can't we use a little fun right now?) It's easy to make on a whim, in fact, definitely simple enough to share mixing and baking with kids. And ... for those of us who are in small households, my version is a small cake specially scaled for a half-size Bundt pan. If you only have a big Bundt pan? Just double the recipe and freeze cake slices for later.
